St Patrick’s Day Baking Recipes

Forget the beer, I want the St. Patrick’s day dessert. With the holiday only a few days away, it is time to bake up some sweet treats to celebrate.


Here are some recipes to celebrate the luck of the Irish!

Mint Chocolate Chip Cookies

Makes 36 cookies


Ingredients

  • 1 cup sugar

  • 1/2 cup butter, softened

  • 1 egg

  • 1/2 cup sour cream

  • 1 3.4oz box instant vanilla pudding mix

  • 1/2 teaspoon salt

  • 1/2 teaspoon baking soda

  • 2 cups all-purpose flour

  • 2 tsp mint extract

  • 3 drops blue coloring + 10-15 drops green coloring

  • 1 1/2 cups chocolate chips


Instructions

1. Cream together sugar and butter. Add egg, sour cream and pudding mix.

2. In a small bowl, combine flour, salt & baking soda.

3. Incorporate flour mixture into the pudding mixture and mix until well combined. Add mint extract and food coloring until desired color is achieved.

4. Add in chocolate chips.

5. Drop by rounded tablespoonfuls onto greased cookie sheet.

6. Bake at 375 for 10 minutes. Transfer to a cooling rack.

Rainbow Rice Krispie Squares

Makes 12 servings

Ingredients

  • 3 tablespoons butter

  • 4 cups mini marshmallows

  • 6 cups Rice Krispies

  • Candy covered chocolate


Instructions

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2. Add Rice Krispies. Stir until well coated.

3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool.

4. Place candy covered chocolate onto top of Rice Krispie squares. 5. Cut into 2-inch squares. Best if served the same day.


 

Green Velvet Cupcakes

Makes 12 servings


Ingredients

Cupcakes

  • 1 1/4 cups all purpose flour

  • 3/4 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup sugar

  • 1/2 cup butter, cold, cut into pieces

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup milk

  • Green food colouring

Cream Cheese Icing

  • 4oz cream cheese, softened

  • 1/2 cup butter, softened

  • 3 cups powdered sugar

  • 1 teaspoon vanilla extract

  • 1-2 tablespoons half and half or heavy cream


Instructions

Cupcakes

1. Preheat the oven to 350°F. Line a cupcake pan with muffin cups.

2. In a large bowl, whisk together the flour, baking powder, baking soda, salt and sugar.

3. Add the butter. Combine until the mixture resembles coarse crumbs.

4. Add the eggs, vanilla and milk, and stir until combined.

5. Add 6-8 drops of green food colouring and stir until well distributed.

6. Scoop the batter into the pan, filling the cups 1/2 to 2/3 full.

7. Bake for 15 to 18 minutes. Remove from oven and let cool.


Frosting

1. Add the cream cheese and butter to a medium bowl and beat until smooth.

2. Add the powdered sugar and vanilla and beat until smooth.

3. Add 1 tablespoon of half and half and beat on high until light and fluffy. Add additional half and half as needed to make a light and fluffy frosting.

4. Pipe onto cooled cupcakes and decorate as you wish.
