This Lebanese inspired dish is a healthy and delicious option that I have grown up with and continue to make. Filled with flavours of many fresh vegetables and crunchy pita, eating healthy does not have to be boring.
Ingredients
Salad
1 large head of romaine lettuce, chopped
1 large tomato, diced
2-3 Persian cucumbers, quartered
1/2 large green pepper, chopped
5 radishes, diced
2 green onions, chopped
1/4 cup fresh chopped parsley
Dressing
3 tablespoons of olive oil
2 tablespoons of lemon juice
2 garlic cloves, pressed or grated
1 teaspoon of sumac
1 teaspoon of pomegranate molasses
1/2 teaspoon of dried mint
1/2 teaspoon of salt
Fresh cracked pepper, to taste
Fried Pita Bread
1 large double ply pita bread, cut into triangles
3 tablespoons of olive oil
Salt, to taste
Freshly cracked pepper, to taste
Instructions
Dressing
Whisk together the lemon juice, garlic, sumac, pomegranate molasses, dried mint, salt and pepper.
Slowly pour in olive oil, whisking until emulsified.
Season to Tate with salt and pepper.
Set aside
Pita Bread
In a large skillet, heat olive oil on medium heat.
Add the pita bread.
Season with salt and pepper.
Stir frequently until the pieces of bread become crispy and golden, about 5-7 minutes.
Set aside.
Salad
Place lettuce, tomato, cucumbers, green pepper, radishes, green onions, and parsley in a large serving bowl.
Pour the dressing on top.
Toss to combine.
Add the fried pita bread to the salad immediately before serving and gently toss again.
